Granola-y Goodness

When I was in college my dad used to ship me big bags of homemade granola. Not only was it a yummy treat, but it made me feel 'homey' even when I was in a concrete block dorm room. I was feeling a little lonely tonight, so decided to make some granola and hopefully create some warm feelings to go with it... mmm...


3 cups old fashioned oats
1/2 cup wheat germ
3/4 cup flaked coconut
3/4 cup chopped pecans
3/4 cup sliced almonds
1/2 cup dried cranberries
1/2 cup raisins
1/2 cup dried apricots, chopped
3/4 cup vegetable oil
1/2 cup good honey
1 tsp cinnamon

preheat oven to 350. Mix together oats, wheat germ, cocnut, and nuts. Whisk together oil, honey, and cinnamon, add to oat mixture, and toss until evenly coated. Spread mixture in thin layer on shallow pan, toast in oven, stirring every couple minutes to prevent burning. Once everything is golden brown, remove from oven and put out on wax paper to cool. Once it is cool return to bowl, add fruit and mix.
Keep it in an air-tight container. I like a nice big scoop over a bowl of yogurt.
